Not Your Momma's Meatballs (I don't know, maybe they are, I don't know your momma...)
Today I bring you a recipe that always pleases my family. My mom was a superb cook and while her meatloaf, a family staple was full of fresh ingredients, plump tomatoes and baked with love I hated it. I just don't like giant chunks of juicy veggies mixed in my meat bread.
Years ago I made a meatloaf that I and my whole family enjoyed and I've often adapted this recipe into meatballs. Here's the recipe below. It's tasty if served with sautéed squash and mashed potatoes but today we had it with buttered carrots and fried potatoes and onions.
Preheat oven to 375. Grease a muffin tin or prepare a cast iron skillet like the one pictured above.
In a large bowl combine 1 1/4 pound ground beef (or pork, chicken or venison), 1/2 a cup of flour, 1 tsp onion powder, 1 tsp garlic powder, 2 tsp salt and 1 egg. Mix well.
In another bowl combine 3/4 cup ketchup, 2 tbsp your favorite spicy brown mustard and 3 tbsp brown sugar.
Throw about 2 tbsp of the ketchup mixture into your meat mix and combine.
Roll the meat into 12-16 meatballs and place into the skillet. It's ok if they touch. You can also put one meatball in each muffin tin space. Then, spoon the rest of the sauce onto the meatballs. Bake about 35-40 minutes.
Let cool and enjoy!
